Last week, my domain host, Blogger, had a serious glitch and went down. It took my last two posts as well as four more I had written and saved. Ugh.
Since many of you had left comments for a chance to win a copy of The Lazy Gourmet, please leave one again today, and I'll announce a winner on Wednesday. Thank you so much for your understanding and patience.
Below you'll find the recipe for Caramelized Fennel I posted from the book. The gals say that "one of the most powerful weapons in the Lazy Gourmets arsenal is fennel." I couldn't agree more.

Caramelized Fennel
Serves 2 to 4
2 medium fennel bulbs, leafy tops trimmed and discarded (or saved for another use)
3 tablespoons olive oil
1/2 teaspoon kosher salt
1 tablespoon balsamic vinegar
1 ounce (about 1/3 cup) grated Parmesan cheese
1. Have fennel bulbs, remove core, and thinly slice. Heat olive oil in a large skillet over medium heat. When oil is hot but not smoking add fennel and cook, stirring occasionally, until soft and beginning to brown about 30 minutes. Sprinkle with salt, stir in vinegar, and remove from heat. Serve topped with grated Parmesan.

The title of the book itself sounds perfectly fit for me. As far as food goes, I am a bit lazy and usually end up using the same recipes over and over (from the box!). This book could only help.

The same thing happened to my posts on blogger, including a guest blog I had written for another blog. However, I posted that they were missing on a blogger help forum and they reappeared the next morning.

Would love a copy of the book!!! I love fennel. I have never cooked it before, so I curious on how to fix it.

The blogger melt down was such a pain.
Can I recommend you look at LiveWriter, the free tool I use to write my blog posts now.
It can pick up your template from your blog so all posts are always formatted correctly for your blog and gives a much easier interface for writing posts, especially if you use a lot of images as I do - I hate inserting them via blogger, 5 at a time, but having to browse the link to each one. LW lets me insert them in one go, with a normal Windows interface selection dialog box. All the normal options such as adding tags and specifying post date are there too.
Then you can just publish to the blog when ready, either in draft form or ready to go live on the specified date.
If anything is lost or mangled by blogger, you can simply upload again from LW.
Although it means I do all my writing on my one home PC, it has made life so much easier.
PS I'm not affiliated in ANY way with LW, but I was pulling my hair out a LOT with blogger until a fellow blogger friend recommended it last year and I would not go back!

Oh, that stinks! I'm sorry you lost so many posts. I don't think I lost any but I haunt checked my saved ones. I left a comment before and I'd really love to win a copy of this cookbook it sounds lovely.

Being lazy myself, I so rarely have posts written ahead of time...now I have an even better excuse to refrain! Maybe yours will come back - I had a post disappear for two days and then reappear. It is a terrible feeling to lose work!

I was lucky and only had one post in the hopper when blogger did its thing. I usually write my blog in MS Word then copy it in, so I just had to re-add the photos and all was good. I am going to check out LiveWriter and see if that would work for me. I am so not a techno person so this blogging thing is really teaching me a lot about all this stuff. Hope I win the book to add to my collection. Cheers!
