Eat Christmas Cookies, Season 2: Christmas Cookies from Around the World

Santa Claus has decided that one lucky entrant of Eat Christmas Cookies, Season 2 will receive a copy of Field Guide to Cookies by Anita Chu of the delicious blog Dessert First. On December 22nd, Santa (with the help of will select the winner and make his announcement. So please, no late entries.

175 g butter
50 g sugar
1 tsp vanilla sugar
1 tbsp. apple juice
1 tsp.ground cardamom
250 g flour
1 tsp baking powder
a pinch of salt
as much melted chocolate as you need ( and want:-) )

Cream the butter with the sugar and vanilla and vanilla sugar. Add apple juice and cardamom. Mix flour,baking powder and salt. Add wet ingredients and quickly form a dough. Wrap the dough in foil and place in the fridge for at least two hours. Roll the dough into rolls that are as thick as your fingers. Cut them into 2-3 cm long pieces, place on baking tray and flatten with a fork so that there`s an imprint. Bake at 180 degrees celsius for 10-15 minutes. When cool, melt chocolate and dip one side of the cookies into it. let them dry off and eat.

Though Krista doesn't have a blog, she excitedly shares her recipe for Almond Roca cookies, which she has been making every Christmas for the last eight years. Clearly these are some special cookies. Here is her only caveat: These are highly addictive, so watch out!

Almond Roca
1 lb. butter - no substitutes
1 c. sugar
1 c. brown sugar
10 oz almonds, coarsely chopped
12 oz. chocolate chips

Melt butter over medium heat. Add sugars to melted butter. Stir constantly until mixture reaches hard crack state. About 350 on your candy thermometer. Remove from heat. Immediately add about 8 oz of the chopped almonds and pour into lipped buttered cookie sheet.Spread 6 ounce chocolate chips on top of mixture with spatula as they melt. Sprinkle with chopped almonds. Cool in refrigerator. Turn onto waxed paper. Melt remaining chips and pour on 2nd side of the almond roca. Sprinkle with remaining almonds. When cooled break into chunks. I don't turn it over anymore to do the second side, but I have in the past. And it's yummy; you just need to wait a bit longer before you can eat it.
